Yum Yum Hash Brown Casserole


1 bag of hash browns (chopped and thawed);
300 ml  of Sour Cream (if you aren't a great fan of sour cream go for double cream instead);
1 Can of Condensed chicken soup; 
Grated Red Leicester Cheese (any cheese will do);
Grated mozzarella;
Diced chicken (you can use any pre-cooked meat: ham, mince, frankfurters, goujons);
Diced pancetta (or bacon, diced peppers, sweetcorn, whatever you fancy);
Crushed Corn flakes (or breadcrumbs, or tortilla chips) for the topping;
1 Chopped Onion;
150 g of melted butter.

Preheat oven to 350 degrees F (175 degrees C);
In a large bowl, combine melted butter, chicken soup, sour cream, red cheese, onion and some parsley and black pepper;

In goes the chicken and pancetta. Mix well before adding the hash browns broken in large pieces;

Place mixture in a casserole dish, sprinkle some crushed tortilla chips and cheese;

Bake covered in preheated oven for 40 minutes, remove foil and bake for another 10 to 15 minutes.
